Job Title: Captain (Chef de Rang)
Reports to: Head Waiter
Replaced by: Waiter
Basic Functions:
Under the guidance and supervision of the Head Waiter and within the limits of established The RAY Hotel & Studios policies and procedures, is responsible for providing an efficient service of food and beverage products for restaurant costumers
Duties & Responsibilities:
o Have a thorough knowledge of the hotel policies and procedures
o Abide to hotel rules and regulations on grooming and appearance
o Have a thorough knowledge of Hotel services, products and special promotions
o Have a thorough knowledge of Restaurant services, products and promotions
o Participate in daily briefings and other meetings as scheduled by the management
o Participate in training sessions as scheduled by the management
o Have a thorough knowledge of the menu items and cooking methods
o Be sure all employees are aware of discrepancies in kitchen and pastry, in case of any
o Greet guests upon arrival and direct them toward their tables
o Take guest orders and accommodate their needs
o Ensures all customers in his section are pleased with the service
o Perform up-selling and cross-selling techniques
o Ensures all tables in the restaurant are clean and ready to accommodate guests at all time
o Ensures side stations are clean and stocked with needed cutleries and supplies at all times
o Ensure the dining area is clean and neat at all times
o Ensures a proper handover between shifts
o Check beverage requisition when delivered
o Prepare beverage inventory at the end of each shift
o Ensures all equipments are in good shape and functioning
o Assist waiters in serving guest orders when needed
o Assist waiters in the set up and preparation of orders when needed
o Responsible for making the linen requisition for the day and collecting linen at the end of the shift
o Assist the bartender in his duties during rush hours
o Performs any other duty as assigned by management
o A minimum of 3 years experience in restaurants
o A degree in hospitality management or its equivalent
o Have the ability to work within a team
o Have friendly and courteous manners
o Have the ability to work under pressure
