The Kitchen
Department manages all aspects of the food
production including hygiene and safety. It also ensures that guests are
provided with an excellent and bespoke culinary experience
responsibilities will include, but not limited to the following:
• Knowledge of
all food & beverage procedures standards, quality presentation,
service and products and local health & sanitation standards
• Estimates and communicates daily production needs
• Responds appropriately to guest needs during hours of
• Ensure that internal customers are communicated with
on a daily basis
• Full awareness of all menu items, their recipes,
methods of production and presentation standards
• Assess quality control and adhere to service standards
• Support the control of food cost
• Carry out close liaison with all section of the
kitchen in order to ensure smooth and efficient service
• Ability to produce own work in accordance with a
deadline and to assist and encourage others in achieving this aim
• To project a pleasant and positive professional image
to all contacts at all times
• Daily
data collection and reporting of issues as they arise
• Support
of Departmental objectives
• Knowledge
of and compliance with Westin/Le Meridien minimum standards
• Diligence
in prevention of wastage
• Thorough
support of and updating the training manual
• Attendance
at Departmental meetings and feedback meetings
• Ensure
full liaison with other members of the section and the Kitchen team
• Key
relationship with the Executive Chef and Sous Chefs
• Ensure full liaison with other members of the section

To move
into this position you should have:
• Team worker with a great attitude to work under
• Good conversational skill in English
• Hotel School Certificate is an advantage
• Good personality & 5* appearance
• Excellent culinary catering talent
• Basic Food & Hygiene training certification
• Good knowledge and understanding of the kitchen and
its operations
• Demonstrate energy and enthusiasm at work
• Knowledge of procedures and methods used in the
preparation, production, presentation and
• storage of food items is required
• Needs to know Italian style food
