His/her primary duty is to produce the best quality food items available. He/she will work closely with the Chef De Partie and Service Associates to assure a smooth operation in all aspects of the Kitchen. The image of the Barr Al Jissah Resort & Spa Muscat should be reflected at all times through fresh, correctly and hygienic prepared food and consistant quality of the highest standards. He/she must have a helpful attitude, extending beyond guest s expectations.
• With minimum 2 years experience in an international hotel in the same capacity.
• Must have advanced international culinary experience
• Must be up to date with new culinary trends available in the market.
• Strictly enforces HACCP guidelines throughout the F&B Kitchen Division.
• To check all stations before service. Responsible for the correct timing during service and to ensure that food served is always of the highest standard and the freshest quality.
• Fully understand the SFSMS guidelines
• Responsible for the hygiene and cleanliness of responsible area in kitchen, including stewarding areas if applicable
• Liaise with chief steward and sous chef on all cleaning (daily and weekly) schedules and inspections to ensure that kitchens are maintaining the highest cleanliness and sanitation levels
• To ensure and maintain that all working tables, working utensils and high risk items (such as slicers, cutting boards, etc) are cleaned and sanitized (with completed documentation) both before and after each use by staff
• To create, foster and nurture the training culture of Shangri-la Hotels and Resorts, highlighting the growth of staff professionally through well organized, thorough, documented training methods provided by Shangri-la Hotels
• To conduct training classes and on the job training for all staff to foster and develop their skills, including new menu items
• To ensure that all staff are aware of hotel rules and regulations
