Roles & Responsibilities
Position Summary:
The Therapeutic Cook (Diet Cook) is responsible for preparing meals according to specific dietary requirements, medical restrictions, and nutritional guidelines prescribed for patients. The role ensures safe, hygienic, and accurate preparation of therapeutic diets such as diabetic, low-sodium, renal, gluten-free, soft, and allergen-controlled meals.
Duties & Responsibilities:
- Prepare and cook therapeutic meals based on diet sheets, physician orders, and nutritionist guidelines.
- Follow specific dietary requirements such as diabetic, renal, cardiac, high/low protein, low cholesterol, soft diets, and allergen-free meals.
- Ensure correct texture modification (pureed, chopped, minced, soft) for patients with swallowing difficulties.
- Maintain consistency in portion control for calorie and nutrient accuracy.
- Follow HACCP and food safety standards at every step of food preparation.
- Maintain cleanliness of all kitchen areas, utensils, and equipment.
- Ensure proper storage, labeling, and temperature control of food items.
- Work closely with dietitians, nutritionists, and nursing staff to ensure accurate meal delivery.
- Report any menu changes, unavailable items, or patient-specific issues to supervisors.
- Read and interpret diet cards accurately to avoid food errors or cross-contamination.
- Assist in planning therapeutic menu options based on nutritional guidelines.
- Monitor stock levels and inform supervisors about required ingredients or shortages.
Desired Candidate Profile
- Minimum 5 years experience working as a cook in a hospital, clinic, or healthcare catering environment (preferred).
- Knowledge of therapeutic diets, nutrition basics, and special dietary requirements.
- Understanding of food allergens, cross-contamination prevention, and dietary restrictions.
- Certificate in Food Safety / HACCP or equivalent (required or preferred).
- Ability to read and follow written and verbal instructions accurately.
