Job responsibilities will include, but not
limited to the following:
• To participate and supervise various sections of the Hot Kitchen as and when required
• To assist the Chef
de Partie in keeping the Hot Kitchen areas and items of equipment in a clean,
hygienic condition
• To assist the Chef de Partie in controlling wastage and achieving gross profit targets
• To undertake the Chef de Partie to achieve a high standard of control in all dishes and items
produced by the Hot Kitchen
• To confirm with foodhygiene regulations currently in force
• To excel every dayto keep high standard as per the chef De Cuisine expectation
• To check the quality and freshness of your product and production
• Be aware of duty of care, and adhere to occupational health and safety legislation, policies and
procedures.
• Initiate action tocorrect a hazardous situation and notify supervisor s managers of potential
hazards and dangers.
• Training on New menu Items
• To expose culinary creativity to the whole kitchen brigade and active contribute to the training
of the outlets
• To be fully aware of all menu items, their recipes, methods of production and presentation standards
• Carry out close liaison with all section of the kitchen in order to ensure smooth and efficient
service
• Assume duties of Chef de Partie in his/her absence
• Demonstrate initiative at all times
• Lead and support the junior members of the team
• Seek own solutions to the minor obstacles that occur from time to time
• Knowledge of and compliance with Westin/Le Meridien minimum standards
• Diligence in prevention of wastage
To move into this position you should have
• The selected Candidate should be able to join on 15 th September
• Tenure in current position minimum one year
• Minimum 4 years experience in a 5* Hotel / Resort
• Hot Kitchen experience is a must
• Must be able to speak, read, write and understand English
• Excellent culinary catering talent
• Good knowledge and understanding of the kitchen and its operations
• Must have worked within a busy operation environment with a large brigade of chefs with
multi-culture
• environment
• Certificate of Achievement with new style / International Cuisine
• HACCP/ Food & Hygiene Training certification
• Knowledge of procedures and methods used in the preparation, production, presentation and
storage of
• food items is required
