SOSi is seeking an Deputy DFAC Manager for our current contract located on Camp Taji, Iraq.
• Assist the DFAC Manager with directing work for a DFAC that supports a population of 3500 and serves 50,000 meals per week and 200,000 per month
• Assist DFAC Manager with the DFAC transition from self-perform to DLA supported AFMIS performance to meet the specified PWS performance standards
• Assist with the Supervision of a Grab-n-Go style caf that augments the meal service when the DFAC is closed
• Lead the effort for administrative actions to ensure all products and menu items as listed in the DA G4 Food Service CONOPs Menu, holiday menu or special event menus are prepared IAW TM 10-412 Armed Forces Recipe Cards, or AFMIS generated recipe card
• Assist DFAC Manager in ensuring that all food items are prepared at required cooking and holding temperatures per the TB Med 530
• Ensure Food Safety standards and all menu standards, are in compliance with TB MED 530 at all times
• Assist DFAC Manager in ensuring DFAC staff uses progressive cooking for all food items to yield optimal freshness, flavor, color, and texture
• Assist DFAC Manager in ensuring DFAC staff prepares food per the estimated AFMIS menu-planning headcount
• Assist DFAC Manager to manage, maintain, and account for government subsistence in support of dining facility operations; accountability functions include accounts management using current automated system Army Food Management Information System (AFMIS)
• Upon implementation of AFMIS, assist DFAC Manager in maintaining SOSi s DFAC account IAW the Basic Daily Food Allowance (BDFA)
• Oversee Admin action to include coordination, supervision, and validation of AFMIS inputs and maintain data into the AFMIS system
• Assist DFAC Manager in ensuring DFAC personnel enters data into AFMIS to provide CJTF with the capability to account for all CL I procurement for DFAC operations and adhere to contract requirements
• Assist DFAC Manager in reviewing, validating, and supervising submission of Account Status Reports, Monthly Earnings and Expenditure Reports, inventories, production schedules, and headcount daily summary will be a reporting requirement
• Assist DFAC Manager in developing AFMIS feeding projections using the previous week headcount data in AFMIS
• Assist DFAC Manager in developing a contingency plan for AFMIS Failure; plan will include manual accounting and data collection when automated systems (AFMIS) fails IAW AR 30-22 and AR 30-22, DA Pam 30-22
• Input manually generated headcount and inventory data in AFMIS within 48 hours once AFMIS is back online
• Assist DFAC Manager in ensuring Self-service items are available for diners without undue delay at all times during the scheduled meal serving period
• Assist DFAC Manager in developing and submitting weekly and monthly physical inventories; vet condemnation, and reports of survey/statement of charges
• Assist DFAC Manager in ensuring DFAC staff serves only approved menus, by TB MED 530, AFMIS, Army Food Service Regulations AR 30-22, DA PAM 30-22, TM 4-41.12, and all regulations as listed in Applicable Publications Part 6
• Assist DFAC Manager in developing a plan to use AFMIS to plan menus, compute ingredients and quantities required to feed 100 persons per menu item
• Assist DFAC Manager in providing oversight ensuring the safe, clean preparation of nutritional and appealing meals offering culinary instruction to subordinate employees, and subcontractors
• Oversees inventory, ordering and food storage
• Assist DFAC Manager in ensuring all food-service operations comply with health and safety codes while adhering to the agency menu plan
• Assist the DFAC Manager in developing and implementing effective cost controls
• Assist DFAC Manager in training and managing kitchen, dining room, and pantry teams
• Assist the DFAC Manager in ensuring a safe and sanitary working environment
• Assist DFAC Manager to Assure the quality and quantity of food preparation and delivery
• Assist DFAC Manager in maintaining records required by contract regarding cost, budgeting, quality assurance, and food subsidies
• Assist DFAC Manager in supervising and training a diverse multicultural group on food procedures, receiving and storing of food, protective measures and preventative maintenance on food-service equipment
• Manage DFAC leave and R&R schedule ensuring sufficient staff is always available to meet requirements
• Ten (10) years of experience in managing related food services operations with a minimum of five (5) years in Large Complex Operations
• At least five (5) years of experience overseeing supply chain support to retail food-service operations
• At least five (5) years of experience with the Department of Defense and Department of State in related life support services and logistics management
• Computer and software skills to include the use of word processing, email, spreadsheets, and electronic presentations
• Excellent oral and written communication skills including the ability to make significant presentations to senior staff and officials
• Army Food Management Information System (AFMIS) experience
• Associate degree
• Contingency Operations experience, and contractor on the battlefield experience
• Experience in cafeteria-style food service management
• Fluency in a foreign language
