Heading all aspects of the kitchen operation and
coordinates functions and activities in all locations. Responsible for implementing and following the
culinary standards and overseeing the culinary operations of the units and
external delivery catering. Responsible
for supervising all kitchen functions including purchasing, preparation and
maintenance of quality standards, sanitation and cleanliness. Menu
planning, creation, implementation, and staff training on all the new menus
including all the special functions, VIP functions, board meetings,
competitions and weddings. Responsible
for the provisioning and preparation of food throughout the Club s Operations,
both on and off the premises and ensure highest standard of hygiene and
cleanliness in the production area. Supervises the preparation of dishes served in all
outlets ensuring that recipes are followed by tasting dishes and sauces on
behalf of the supervisor and suggests additional ingredients. Assists in any of the kitchen areas under his
control and participates in all other jobs in the kitchen when circumstances
required, including baking/confectionery, preparation of sauces, boning and
preparing fillets, so that timely preparation of the meal is achieved. Performs related duties as assigned,
attending special functions, supervising the delivery of food to outside
venues, monitoring staff attendance and presentation. Prepares
kitchen requisitions and obtains approval of the Group Clubs Manager prior to
drawing the items from stores, and ensures that the commissaries drawn are
according to the requisition made and quality of the products as per
contractual terms. Checks all incoming foodstuff supplies to ensure the quality
of items received and to reject those unsuitable for use. Responsible for staff feeding and on job
training of new staff on change of contract.
Responsible for kitchen cleanliness to the highest accepted standard of
Health and Hygiene. Assist in
controlling cost by minimizing spoilage, waste, proper storage and strict
portion control. Performs other related
duties as assigned by Superiors.
Completion of
Intermediate Education followed by 3 years Diploma in Catering /Cookery from a
recognized Catering College or Institute. Should speak and Write English and
preferably Arabic. Minimum of 5 years
experience performing similar duties in a reputable Hotel Restaurant or Club
covering international cuisine.
