Job Description
Roles & Responsibilities
Develop, implement, and monitor hygiene policies and procedures in line with HACCP standards and local regulations.
- Conduct regular inspections of kitchens, restaurants, bars, and storage areas to ensure compliance with hygiene and sanitation standards.
- Lead internal and external audits, maintaining accurate records and ensuring timely corrective actions.
- Train and coach culinary, stewarding, and service teams on hygiene practices, safe food handling, and sanitation procedures.
- Manage pest control programs, chemical usage, and sanitation equipment.
- Collaborate with Culinary and F&B teams on menu development, food storage, and preparation processes to ensure compliance.
- Monitor water safety, environmental hygiene, and waste management across the property.
- Stay updated on global best practices, local authority regulations, and emerging trends in food safety and hygiene.
- Report regularly to senior leadership on compliance status, risks, and improvement initiatives.
- Champion a culture of safety, sustainability, and accountability across the property.
Desired Candidate Profile
What we re looking for
- Bachelor s degree in Food Science, Environmental Health, or related field.
- Certified in HACCP implementation; additional certifications in ISO, food safety, or hygiene management are an advantage.
- Minimum of 5 years experience in a hygiene or HACCP management role, preferably within luxury hospitality.
- Strong knowledge of local and international food safety standards and regulations.
- Excellent communication, training, and leadership skills.
- Detail-oriented with strong organizational and auditing abilities.
- Ability to work collaboratively with diverse teams and lead change effectively.
