An experienced Junior Sous Chef is required for Scalini Dubai, locate in Four Seasons Hotel Jumeirah.nbspThis is a role for a competent and dedicated Junior Sous Chef who is having excellentnbspall round culinary experience in Italian cuisine.
Key Responsibilities:
• Through a hands on approach, assist the Head Chef & Sous Chef to maintain & improve standards of food and service.
• Supervising a shift ensuring both chefs and KP s complete all allocated tasks in a timely manner.
• Delivering a variety of a la carte menus ensuring maximum guest satisfaction.
• Assisting with the development & implementation of new seasonal menus
• Controlling departmental expenses including food costs and wages, in line with business levels.
• Ordering fresh foods as required according to company procedures and ensuring all food & kitchen supplies are kept as per company standards
• Implementing & monitoring all Health & Safety and hygiene practices and procedures
• Training and coaching the junior chefs and carrying out job chats
• Motivating the shift to perform as a team and at their best at all times.
Desired skills, qualities and experience:
• Several years solid experience throughout kitchens up to Junior Sous Chef or Chef de Partie level in similar or larger size operation
• Have worked with fresh foods and have the desire & ability to deliver quality a la carte and buffets
• Experience of large volume functionsnbsp
• Full understanding of food controls & experience of ordering
• Proven man-management, coaching and team building skills
• A pro-active and can-do attitude with excellent team working skills
• Ability to work under pressure
• Flexibility to work on a rota basis across seven days, mornings and evenings as require
