Summary of Position
Directly responsible for all kitchen functions including menu development, food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness.
Duties & Responsibilities
Early 30 s to Mid 40 s, with a vibrant personality and enthusiasm.
3-5 Year s experience in Modern Indian Cuisine experience in a Senior role of at least 2 years.
Preferably from an Indian background having experience in modern Indian Cuisine.
Be able to handle responsibility for all kitchen functions including food purchasing, preparations and maintenance of quality standards, sanitization and cleanliness, preparation of nutritious foods, training employees on nutrient values of certain food, portion and cost control.
Capable of controlling food costs and usage by following proper requisitioning of products from storage areas, product storage procedures, standard recipes and waste control procedures.
Be able to implement and follow HACCP Procedures.
Be a talented and skilled in creating menu items of traditional Indian cuisine.
Be able to understand and train chefs on using a tandoor oven and other cooking methods of the Indian Culture.
Be creative enough to create a signature dish for those that will be excited by Cultural culinary experiences.
Be able to deliver revenues and profits by developing and implementing menu engineering seasonally and periodically.
Be able to monitor food cost very tightly by smart waste reduction philosophy.
Committed to a SOP based business model.
Have exposure to International SOP s orientated business models.
Be able to motivate employees positively and displaying natural good leadership skills.
Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
Check and maintain proper food holding and refrigeration temperature control points.
Provide safety training in first aid, CPR, lifting and carrying objects and handling hazardous materials.
