Job Description

Roles & Responsibilities

A Commis Chef is responsible for preparing and presenting high quality desserts, bakery items, and pastries to deliver an excellent Guest and Member experience while consistently contributing to departmental targets. Specifically, you will be responsible for performing the following tasks to the highest standards:

  • Prepare and assist with baking cakes, pastries, breads, desserts, and specialty items.
  • Support daily mise-en-place for all pastry and bakery operations.
  • Follow established recipes, portion guidelines, and presentation standards.
  • Assist in producing items for buffet, la carte, room service, afternoon tea, and banquets.
  • Set up and stock pastry stations before service.
  • Handle basic baking tasks such as dough preparation, piping, glazing, decorating, and molding.
  • Operate pastry equipment safely (mixers, ovens, proofers, chocolate tempering tools, etc.).
  • Ensure proper labeling, dating, storage, and rotation (FIFO) of all ingredients.
  • Follow all food safety, sanitation, and hygiene procedures (HACCP standards).
  • Maintain cleanliness of work areas, equipment, and tools throughout the shift.
  • Report equipment malfunctions or safety hazards immediately.

Desired Candidate Profile

Previous experience as a Commis Chef or Apprentice Chef

NVQ Level 1

Positive attitude

Good communication skills

Ability to work under pressure

Proven ability to work with a team and to follow instruction

A passion to learn and a drive to succeed in a culinary/hospitality career

Proof of completion in a basic food hygiene course

A passion for food and the culinary arts

Completion of an accredited commercial cookery course or trade apprenticeship

Experience multi-tasking and working in an environment with rigorous standards
