Job Description
Roles & Responsibilities
Assisting in the preparation and portioning of meats, poultry, seafood, and commissary items.
- Ensuring all butchery and commissary products are prepared to the highest quality and safety standards.
- Following standardized recipes, portion controls, and hotel guidelines.
- Maintaining hygiene, cleanliness, and food safety standards within the butchery and commissary sections.
- Monitoring stock levels, assisting with requisitions, and ensuring proper storage of products.
- Supporting the training and guidance of Commis Chefs and kitchen trainees.
- Collaborating with the culinary team to meet requirements for restaurants, banquets, and events.
- Minimizing waste and ensuring proper use of raw materials.
- Handling tools, knives, and equipment safely and responsibly.
Desired Candidate Profile
Diploma or certification in Culinary Arts.
- 2 3 years experience in a butchery or commissary role within a 4/5-star hotel or reputable kitchen.
- Strong knife skills and knowledge of butchery techniques.
- Good understanding of portion control, storage, and hygiene standards.
- Ability to work under pressure in a fast-paced environment.
- Team player with attention to detail and consistency.
