About the Position:


Wynn Al Marjan Island is currently seeking an Executive Pastry Chef to join the resort s Steak House by Alain Ducasse team.

The primary duties and responsibilities of this role are:

  • Plan and manage daily pastry and bakery production aligned to forecasts, reservations, and event need
  • Standardize recipes with precise weights, yields, photos, and allergen declarations; maintain recipe cards in the system.
  • Ensure excellence in lamination, fermentation schedules, dough temperature control, and chocolate tempering; calibrate ovens, sheeters, mixers, and blast chillers.
  • Set plating standards and monitor KPIs for taste, texture, portioning, and ticket times; conduct daily tastings and line checks.
  • Deliver exceptional pastry experiences that reflect the outlet concept and brand standards.
  • Engage with guests on special requests (birthday and wedding cakes, dietary needs) and host tastings when appropriate.
  • Build, schedule, and lead the pastry team; allocate stations (lamination, baking, garnish, chocolate, plating) based on skill and business needs.
  • Author and update SOPs, recipe cards, and visual plating guides; conduct corrective coaching in service.
  • Monitor pastry trends (plant-based, reduced sugar, local fruits, modern techniques) and propose innovations and pricing updates.
  • Collaborate with Culinary, Restaurant, Beverage, Procurement, Engineering, Finance, Marketing, and PR on launches and promotions.
  • Attend department and inter-department meetings; communicate relevant updates.
  • Uphold Company policies, grooming standards, and Code of Conduct; champion sustainability (reduce, re-use, recycle).
  • Follow health and safety standards and drive continuous improvement.

Desired Candidate Profile

The ideal candidate for this position will have the following experience and qualifications:

  • Formal pastry education is preferred (e.g., Dipl me de P tisserie or equivalent).
  • Advanced pastry and bakery techniques: laminated doughs, viennoiserie, sourdoughs, entremets, tarts, petit fours, ice creams/sorbets, gluten-free and vegan adaptations.
  • Chocolate tempering and decoration; sugar work and showpieces; modern glazing and finishing techniques.
  • Creativity with strong aesthetic sense and balanced flavour profiles.
  • Minimum of 10 years professional pastry experience, including 3 5 years in a leadership role within luxury hotels, fine dining, or premium restaurant groups.
