Roles & Responsibilities
The primary duties and responsibilities of this role are:
Develop and implement the vision, mission, and strategy for the Culinary Academy in alignment with Wynn Al Marjan Island Resorts overall culinary philosophy.
Act as the brand ambassador for the Academy, promoting Wynn as an employer of choice for culinary talent.
Lead and inspire a diverse team of instructors, sous chefs, and trainers to deliver world-class culinary education.
Design and oversee comprehensive training programs covering classical cooking techniques, modern gastronomy, baking & pastry, butchery, nutrition, sustainability, and food innovation.
Create specialized programs for leadership development (CDPs, sous chefs, junior chefs).
Partner with HR and Learning & Development to integrate culinary training into employee career paths.
Continuously update training content to reflect global culinary trends, innovation, and Wynn Resorts evolving standards.
Manage the Culinary Academy s teaching kitchens, demo theatres, and training facilities, ensuring state-of-the-art equipment and best practices.
Develop and maintain standard operating procedures (SOPs) for training kitchens to ensure efficiency, consistency, and compliance with HACCP and ISO 22000 standards.
Monitor performance metrics of training programs to measure impact on food quality, guest satisfaction, and team development.
Actively mentor culinary employees across Wynn properties to nurture future leaders.
Establish apprenticeship programs and cross-training initiatives with operational kitchens.
Desired Candidate Profile
The ideal candidate for this position will have the following experience and qualifications:
- Minimum 10 15 years of progressive culinary leadership experience, including Executive Chef or senior culinary training roles in luxury hotels, resorts, or culinary institutions.
- Proven expertise in menu development, modern gastronomy, classical cooking, and global cuisines.
- Strong background in culinary education, training program design, and talent development.
- Excellent leadership, coaching, and communication skills with multicultural teams.
- Professional culinary certification from a recognized institution; additional certifications in food safety and nutrition preferred.
- Innovative mindset with a passion for sustainability, culinary research, and food trends.
