Roles & Responsibilities

Essential Duties & Tasks:

  • Deliver consistently exceptional guest service, anticipating needs and creating a welcoming coffee experience in every outlet.
  • Lead daily coffee operations across assigned outlets/shifts, ensuring smooth service flow during peak periods.
  • Own and maintain coffee quality standards: espresso calibration/extraction, grinder settings, beverage temperatures, milk texturing, latte art, and presentation.
  • Develop, document, and enforce standard recipes and specs for espresso-based drinks, batch brew, cold brew, and seasonal/signature beverages.
  • Conduct daily tastings/quality checks and adjust recipes or calibration to maintain consistency.
  • Train, coach, and supervise baristas; lead onboarding, refresher training, and performance follow-up to close skill gaps.
  • Prepare duty schedules/station plans as assigned and ensure adequate staffing and readiness for service.
  • Ensure mise en place and station set-up meets par levels; coordinate prep lists and replenishment throughout service.
  • Monitor and control product usage and wastage (coffee, milk, syrups, disposables); implement corrective actions to meet cost targets.
  • Coordinate ordering/receiving and inventory management (FIFO, storage standards, stock rotation) for coffee and related items.
  • Maintain cleanliness, hygiene, and food safety standards; ensure compliance with resort policies and local regulations.
  • Manage coffee equipment care: daily/weekly cleaning routines, backflushing, grinder maintenance, and accurate completion of cleaning logs.
  • Liaise with engineering/suppliers for preventive maintenance and repairs of espresso machines, grinders, brewers, and water filtration systems.
  • Ensure accurate POS operation and cash handling where applicable; follow opening/closing procedures and controls.
  • Handle guest feedback and service recovery professionally, escalating issues as needed and ensuring follow-up.
  • Collaborate with F&B leadership on menu engineering, promotions, and continuous improvement of the coffee program.
  • Support departmental briefings and communicate standards, updates, and priorities clearly to the team.
  • Perform any other duties assigned by management in line with operational needs.
  • Understand, implement, and consistently apply Forbes Travel Guide (Forbes) standards and the resort s luxury service standards across all coffee service points, ensuring compliance in product quality, presentation, cleanliness, guest interaction, and service recovery.

Desired Candidate Profile

Qualifications / Experience:

  • Minimum educational qualification: completion of secondary school; hospitality/culinary studies are an advantage.
  • Minimum of 3 5 years experience as a specialty coffee barista, including at least 1 year in a senior/lead role, ideally within a luxury hotel or resort environment.
  • Strong technical proficiency in espresso extraction and calibration (dose/yield/time), grinder adjustment, beverage temperature control, and milk texturing/latte art.
  • Proven leadership experience training, coaching, and supervising baristas; able to run shifts, assign stations, and uphold service standards during peak periods.
  • Strong knowledge of coffee (origins, processing methods, roast profiles) and brewing methods (espresso, batch brew, pour-over, cold brew), with the ability to explain and recommend to guests.
  • Demonstrated ability to manage inventory, par levels, ordering/receiving, and stock rotation (FIFO) for coffee, milk, syrups, and disposables, with a focus on cost control and minimal wastage.
  • Excellent attention to detail in station set-up (mise en place), cleanliness, and compliance with hygiene, HACCP/food safety, and resort standards.
  • Excellent guest service focus and interpersonal communication skills, including confident service recovery and complaint handling.
  • Strong organizational and multitasking abilities in high-volume environments, with the ability to prioritize and stay calm under pressure.
  • Proficient in POS systems and handling cash/card transactions, following opening/closing procedures and control standards.
  • Specialty coffee certification/training is preferred (e.g., SCA modules, authorized brand training), with a passion for continuous learning and coaching others.
  • Fluency in English is essential; additional language skills are an asset.
  • Competent in coffee equipment care: daily/weekly cleaning routines, backflushing, grinder maintenance, and coordination with engineering/suppliers for preventive maintenance and repairs.
  • Professional, positive attitude with strong work ethic and a team-oriented, hands-on leadership style; flexible to work shifts, weekends, and holidays as required by business needs.
