Job Description
Roles & Responsibilities
Implement and maintain hygiene standards across all work areas, kitchens, stores, receiving, and disposal areas.
- Monitor, assist, and enforce all procedures and protocols to ensure a safe, hygienic, and sanitary environment in compliance with IHG standards and local regulations.
- Conduct regular kitchen inspections (daily spot checks, monthly audits, and sanitation inspections) covering personal hygiene, food handling, equipment, storage, and environmental conditions; issue reports and corrective action plans.
- Oversee food safety practices, including monitoring food storage, rotation, labeling, and temperature control of refrigerators, freezers, and received items.
- Inspect food holding, transport, and kitchen equipment to ensure compliance with hygiene requirements.
- Maintain accurate records of food safety and hygiene forms, audits, inspections, corrective actions, and reports.
- Organize and lead food safety meetings and training sessions for all kitchen, stewarding, and service staff.
- Conduct hygiene audits of associates, provide feedback, and develop on-the-job training to improve performance.
- Liaise with external agencies (laboratories, government bureaus, health practitioners) for testing, inspections, and sanitary compliance.
- Coordinate microbial food tests for new suppliers, products, and in case of foodborne illness complaints.
- Conduct vendor inspections in collaboration with the Purchasing Department and Executive Chef.
- Liaise with the Pest Control Company and Housekeeping on pest prevention, monitoring, and performance reviews.
- Work closely with management to ensure continuous improvement in hygiene standards and food safety culture throughout the hotel.
Desired Candidate Profile
What we need from you
- Minimum two to three years of work experience as a Hygiene Manager in a 4/5 stars hotel.
- Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards, Certifications.
