Job Description
Roles & Responsibilities
Job Overview:
The operational cost controller is responsible for monitoring and maintaining cost efficiency and variance traceability.
Duties and Responsibilities:
- Track and analyze daily operational costs.
- Work closely with operation to align cost-saving initiatives and implement controls to prevent overstocking and minimize losses.
- Ensure compliance with company policies and financial regulations.
- Conduct regular spot checks on the receiving and return processes to verify compliance and detect irregularities.
- Monitor and track transfers of materials ensuring proper documentation and flow.
- Regularly review and update recipes to ensure cost accuracy.
- Implement and enforce portion control standards and validate ingredients usage
- Review daily sales data/discounts and voids and compare it against daily operating costs to evaluate profit margins.
- Monitor utilities consumption (gas, electricity, water) and implement energy-saving initiatives to reduce costs.
- Maintain clear communication between the kitchen, FOH, and management along with accurate reporting to the superior
- Validate stock counts for material items to prevent discrepancies and ensure accurate inventory levels.
- Monitor and control stock variances.
Qualifications & Skills:
- 1-2 years of experience in cost control or any other operation field in F&B
- Bachelor s degree in business administration or any related field
- Advanced Microsoft excel skills for data handling and management
- Attention to detail and ability to work under pressure
- Time management by prioritizing tasks and meeting deadline
- Flexible with working hours including the possibility of working on weekend when necessary.
