Join a contemporary, independent caf in Dubai known for its artisanal craftsmanship and creative approach to pastry. We are seeking a strong>Food Designer / Pastry Chef (R&D)/strong> to lead the pastry section and shape the brand s creative direction through innovative desserts and baked goods. This is a rare opportunity for a technically skilled and imaginative pastry professional to merge design, flavor, and research in a fast-evolving concept.

Key Responsibilities

  • Develop and test new pastries, desserts, and bakery items in line with brand vision and seasonal trends.
  • Combine artistry and food science to create balanced, visually striking products.
  • Conduct research and development focused on flavor pairing, texture, shelf life, and sustainability.
  • Collaborate with chefs, stylists, and photographers to bring creative concepts to life.
  • Maintain documentation for recipe testing and feedback cycles.
  • Scale recipes for production while preserving consistency and quality.
  • Train and support kitchen staff on new product execution.
  • Oversee costing, ingredient sourcing, and supplier coordination.
  • Introduce innovative methods, techniques, and modern equipment to enhance production quality.

Desired Candidate Profile

Formal culinary education specialising in pastry or baking.

  • 2 5 years of professional experience in a restaurant, bakery, or creative food studio.
  • Expertise in classic pastry foundations: lamination, tarts, entremets, and plated desserts.
  • Strong creative sensibility and understanding of colour, composition, and texture.
  • Knowledge of modern pastry techniques and equipment.
  • Fluent in English.
  • Female candidates aged 20s 30s preferred.
  • Open to candidates currently inside or outside the UAE.
