Position Overview
Atlantis The Royal is seeking a highly knowledgeable and passionate Sommelier to join the world-renowned Dinner by Heston Blumenthal. In this role, you will curate exceptional wine experiences for guests, showcasing expertise in pairing fine wines with avant-garde dishes inspired by historical British cuisine. You will oversee the wine program, maintain inventory, and work collaboratively with the restaurant management and culinary teams to elevate the overall dining experience to Michelin-star standards.

Key Responsibilities
* Maintain and update the wine list in collaboration with the Assistant General Manager and Beverage Director.
* Manage wine procurement, stock rotation, and cellar organization in line with restaurant standards.
* Provide expert wine recommendations and pairings tailored to guests preferences and dishes.
* Ensure all wines are served at optimal temperatures and with appropriate glassware.
* Deliver personalized service while maximizing upselling opportunities for premium wines and beverages.
* Conduct wine tastings, training sessions, and workshops for restaurant staff to enhance knowledge and service consistency.
* Work closely with suppliers, distributors, and importers to source unique and exclusive labels.
* Maintain compliance with licensing, health, and safety regulations in all beverage operations.
* Contribute to the development of seasonal wine pairings and beverage experiences that reflect Heston Blumenthal s innovative philosophy.
Ideal Profile
* Minimum 2 years of experience as a Sommelier in a luxury fine-dining restaurant or 5-star hotel.
* Certification Level 2 or higher from the Wine & Spirit Education Trust (WSET) or equivalent qualification.
* Strong knowledge of Old World and New World wines, with expertise in pairing wine with complex dishes.
* Excellent interpersonal and communication skills with a refined approach to guest engagement.
* Proven ability to manage wine inventories, vendor relationships, and staff training.
* Passionate about hospitality, fine wines, and delivering exceptional guest experiences.
* Fluency in English is required; additional languages are an advantage.
