Job Description

Roles & Responsibilities

Reporting to the Executive Chef, the responsibilities and essential functions of the position include, but are not limited to:

  • Manage all kitchens in the absence of the executive chef
  • Create all menus under the direction of the executive chef
  • Create daily product purchasing lists, ensuring food quality and respecting budgets
  • Liaise with warehouse staff to ensure quality is maintained
  • Work closely with Catering Services to assist with menu coordination and meeting with clients
  • Organize daily preparatory meetings with all sous-chefs
  • Ensure that all Kitchen colleagues are aware of the rules and objectives
  • Communicate daily with point of sale managers and sous chefs to find out customer feedback
  • balance operational, administrative and colleague needs
  • Ensure that staff allocation and scheduling are in accordance with productivity instructions
  • Comply with Kitchen policies, procedures and service standards
  • Follow all health and safety policies when handling food and beverages
  • Other duties as assigned.

Desired Candidate Profile

Qualifications:

  • Previous experience in a management position in the culinary field
  • A diploma or certificate in a culinary discipline is an asset
  • Demonstrate significant experience in cost control, including food, material, labor, and loss, to achieve the hotel's food quality and financial objectives.
  • Knowledge of Microsoft Windows applications
  • Excellent interpersonal skills and problem-solving skills
  • Particularly responsible and reliable
  • Ability to work effectively under pressure in a fast-paced environment
  • Ability to work in a team
  • Knowledge of current trends
  • Ability to focus attention on customer needs, remaining calm and courteous at all times
  • Previous experience in a management position in the culinary field
