Roles & Responsibilities

A Mediterranean-inspired beachfront restaurant in Dubai is seeking an experienced Sous Chef Fish / Fishmonger to join its culinary team for the upcoming season. The venue combines elegant coastal dining with a relaxed yet refined atmosphere, offering a fresh seafood-focused menu influenced by Southern European cuisine.

Key Responsibilities

  • Lead the fish station, including receiving, filleting, portioning, and storing seafood to the highest standards
  • Ensure product quality, freshness, labeling, and HACCP compliance
  • Prepare daily mise en place for a seafood-driven la carte menu and seasonal specials
  • Collaborate with the Head Chef on menu planning and seafood sourcing
  • Maintain hygiene and safety standards in line with Dubai Municipality regulations
  • Engage with guests when required, offering knowledgeable, confident interaction regarding seafood offerings

Desired Candidate Profile

Previous experience as a fishmonger or working the fish station in a high-end or beachside restaurant

  • At least 2 years as a Sous Chef
  • Strong knife skills and deep understanding of seafood quality and preparation techniques
  • Comfortable interacting with guests and explaining menu items with clarity and professionalism
  • Proven ability to work in a fast-paced, team-oriented kitchen environment
  • Food Safety certification (or ability to obtain it before start date)
  • Available to start on 01 September 2025 and commit to a seasonal contract
