Job Description
Roles & Responsibilities
Job Scope:
- Supervise the daily operations of the stewarding team, including dishwashing, kitchen cleaning, waste management, and equipment care.
- Ensure timely and efficient cleaning and preparation of all kitchen areas, utensils, and equipment for service.
- Allocate tasks and schedules to stewarding staff to maintain smooth operations during peak and off-peak periods.
- Monitor workflows to ensure adherence to SOPs and luxury brand standards.
Hygiene & HACCP Compliance
- Enforce strict compliance with food safety, hygiene, and HACCP procedures within all stewarding areas.
- Conduct regular checks of dishwashing, kitchen, and storage areas to ensure cleanliness and prevent contamination.
- Ensure proper use, storage, and handling of cleaning chemicals in line with safety regulations.
- Maintain accurate cleaning and hygiene records for audits and inspections.
Team Leadership & Development
- Lead, coach, and mentor stewarding staff to ensure professional conduct, discipline, and operational excellence.
- Conduct on-the-job training on hygiene standards, chemical handling, waste management, and SOPs.
- Provide feedback, address performance issues, and support the Chief Steward in team development initiatives.
Equipment & Inventory Management
- Monitor the condition and cleanliness of kitchen equipment, utensils, and tools.
- Report equipment issues to the Chief Steward for timely maintenance or replacement.
- Track cleaning supplies, chemicals, and protective equipment; assist in reordering when needed.
Collaboration & Communication
- Work closely with the Chief Steward, culinary team, and F&B outlets to ensure operational needs are met.
- Communicate effectively with team members regarding tasks, schedules, and priorities.
- Report operational performance, hygiene issues, and team matters to the Chief Steward promptly.
Desired Candidate Profile
Education, Qualifications and Skills:
- Diploma or certificate in Hospitality, Food Safety, or related field preferred.
- HACCP and food safety certification is required.
- Minimum 3 5 years experience in stewarding or back-of-house operations in a luxury hotel or high-volume F&B environment.
- Strong knowledge of cleaning procedures, chemicals, kitchen equipment, and hygiene standards.
- Excellent leadership, communication, and organisational skills.
- Ability to supervise a team effectively while maintaining high standards of cleanliness and safety.
- Fluent in English; Arabic is highly desirable.
