Job Description
Roles & Responsibilities
Cold Food Preparation: Preparing cold menu items such as salads, dressings, cold soups (e.g., gazpacho), and sandwiches.
Specialty Items: Creating and managing charcuterie boards, pates, terrines, and foie gras.
Buffet & Display: Designing and arranging elaborate buffet platters, cold displays, and sometimes ice carvings or garnish arrangements.
Food Safety & Storage: Overseeing the proper storage, labeling, and handling of cold food items to ensure sanitation and prevent spoilage.
Inventory & Ordering: Monitoring inventory levels, preparing daily food requisitions, and managing food costs for the station.
Collaboration: Working with other chefs (hot line, pastry) to ensure smooth kitchen operations and timely service.
Desired Candidate Profile
Knife Skills: High proficiency in slicing, chopping, and precision cutting.
Culinary Creativity: A strong sense of artistic presentation and plating.
Knowledge of Preservation: Familiarity with techniques like smoking, curing, and pickling.
Efficiency: Ability to work quickly in a fast-paced environment and maintain high-volume production.
Experience: 1–4 years of experience in a similar role is usually required, often in hotels, resorts, or fine-dining restaurants.
