We invite you to join the world of luxury hospitality at Raffles & Fairmont Doha as our new Commis 1.

As a Commis 1 at Raffles Doha and Fairmont Doha, you will play an essential role in delivering exceptional culinary experiences that reflect the elegance, craftsmanship, and service excellence synonymous with both brands. Working alongside a talented culinary team, you will support the preparation and presentation of high-quality dishes while maintaining the highest standards of hygiene, consistency, and attention to detail.

With a passion for culinary artistry and a commitment to operational excellence, you will contribute to creating memorable dining experiences for our guests through professionalism, teamwork, and dedication to the refined standards of Raffles and Fairmont.

Key Responsibilities:

  • Assist in the preparation, cooking, and presentation of dishes in accordance with the culinary standards of Raffles Doha and Fairmont Doha.
  • Ensure all food preparation areas are maintained to the highest standards of cleanliness, organization, and hygiene in line with HACCP and hotel policies.
  • Support senior chefs in daily kitchen operations, including mise en place, stock rotation, and food storage procedures.
  • Maintain consistency, quality, and presentation across all dishes while following established recipes and brand standards.
  • Monitor food quality and freshness to ensure an exceptional dining experience for guests.
  • Collaborate closely with colleagues across the culinary and stewarding teams to ensure smooth and efficient operations.
  • Adhere to all health, safety, and sanitation guidelines while maintaining a safe working environment.
  • Assist in minimizing waste and controlling food costs through efficient use of ingredients and proper portioning.
  • Ensure all kitchen equipment is handled responsibly and report any maintenance requirements promptly.
  • Remain knowledgeable about hotel dining concepts, menus, seasonal offerings, and culinary promotions.
  • Handle assigned tasks with professionalism, attention to detail, and a commitment to operational excellence.
  • Contribute to a positive and collaborative team culture while upholding the luxury service philosophy of Raffles & Fairmont Doha.

Desired Candidate Profile

What will you bring to this role?

  • Previous experience as a Commis Chef or in a similar culinary role within a luxury hotel or fine dining environment, ideally within brands such as Raffles Doha and Fairmont Doha.
  • Strong foundation in culinary techniques with a passion for gastronomy, presentation, and refined execution.
  • Good communication skills in English; additional languages are an advantage in a diverse kitchen environment.
  • Strong teamwork and collaboration skills with the ability to work effectively in a fast-paced, high-pressure kitchen.
  • High level of attention to detail, consistency, and commitment to maintaining exceptional food quality standards.
  • Familiarity with kitchen operations, food safety standards, and HACCP guidelines within a luxury hospitality setting.
  • Strong organizational skills with the ability to follow instructions accurately and efficiently.
  • Positive attitude, eagerness to learn, and willingness to develop culinary skills under senior chefs.
  • Ability to adapt to shifting priorities, multitask, and maintain composure during busy service periods.
  • Flexibility to work rotating shifts, weekends, and public holidays in line with operational requirements of Raffles & Fairmont Doha.
