Roles & Responsibilities
Based at Mandarin Oriental, Doha within the Culinary Department in Doha, the Commis 1 Wok Station is responsible for the preparation and execution of authentic Asian cuisine, with a specific focus on wok-based dishes. This role ensures that all items are cooked with precision, consistency, and in accordance with Mandarin Oriental standards. Working under the guidance of senior chefs, the position supports daily mise en place, wok station service, and coordination with the broader culinary team. Maintaining hygiene, safety, and operational excellence is central to this role s contribution to the kitchen brigade.
As Commis 1 Wok Station, you will be responsible for the following duties:
- Prepare and execute authentic Thai and Chinese dishes at the wok station, ensuring each dish meets the highest standards of taste, texture, and presentation.
- Complete mise en place preparation for wok service, ensuring ingredients are prepped, portioned, and stored according to food safety and culinary standards.
- Maintain a clean, organized, and compliant workstation at all times, observing HACCP principles and hotel hygiene protocols.
- Work efficiently during service periods and support seamless coordination within the kitchen brigade, under the guidance of senior chefs.
- Collaborate across other culinary stations including Sushi, Cold Kitchen, la carte, and Breakfast as required, demonstrating adaptability and a team-focused mindset.
- Uphold Mandarin Oriental s grooming, uniform, and conduct standards, acting as a brand ambassador in every interaction.
- Participate in kitchen briefings, operational meetings, and culinary training to enhance skill development and contribute to a high-performance kitchen environment.
Desired Candidate Profile
High school diploma or equivalent required; formal culinary training preferred.
- Minimum one year of experience in an Asian restaurant or luxury hotel kitchen, with hands-on wok cooking experience.
- Solid knowledge of wok cooking techniques, Asian flavor profiles, and ingredient handling particularly in Thai and Chinese cuisine.
- Strong sense of responsibility, time management, and focus under pressure; able to work in high-temperature conditions while maintaining operational standards.
- Effective verbal communication in English required; additional languages, including Arabic, are considered an advantage.
