Roles & Responsibilities
Based at the Mandarin Oriental Downtown, Dubai within the Food and Beverage Kitchen, Colleague Dining section in Dubai, the Demi Chef de Partie is responsible for delivering nutritious, well-balanced, and delicious meals to our Colleagues. This role is ideal for a passionate culinarian who values consistency, quality, and care in every dish served. Demi Chef de Partie reports to Chef de Partie.
As a Demi Chef de Partie, you will be responsible for the following duties:
Assist the Chef de Partie in preparing and cooking daily meals for staff with high standards of taste, nutrition, and presentation, while making sure that all ingredients are prepped, and dishes are produced according to standard recipes and portion sizes.
Maintain a clean, safe, and organized kitchen environment that reflects the quality and professionalism of the brand.
Work under pressure and support smooth service during peak hours, ensuring quality and timeliness.
Monitor and manage stock and inventory within your section, assisting with ordering and minimizing waste.
Collaborate effectively with the wider kitchen team, contributing to a positive, productive work culture.
Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.
As a Demi Chef de Partie, we expect from you:
High school diploma or equivalent; formal culinary training is an advantage.
Minimum of 2 years experience as Demi Chef de Partie in a high-volume of a 5-star hotel or standalone restaurant.
Strong culinary skills across international cuisines, with an understanding of dietary requirements and balanced nutrition.
Solid knowledge of kitchen operations, food presentation, and preparation.
Strong understanding of HACCP and food safety practices.
Effective communication skills in English (verbal & written); knowledge of additional languages is a plus.
Experience in hotel pre-opening or renovation projects is preferred.
A team player with a passion for food, attention to detail, and a drive for continuous improvement.
