Job Description
Roles & Responsibilities
Prepare and bake Neapolitan pizzas in strict accordance with traditional methods, ensuring proper dough hydration, fermentation time, topping balance, and bake profile.
Mix, ferment, proof, and hand-stretch high-hydration dough using time-honoured Italian techniques for optimal crust texture and flavour.
Source and prepare premium ingredients San Marzano tomatoes, fresh mozzarella, and other authentic toppings ensuring quality and freshness.
Operate and maintain a wood-fired or stone oven at optimal temperature (around 430 480 C), ensuring even bake and signature leopard spotting on the crust.
Collaborate with the Head Chef to design seasonal or signature pizzas, maintaining brand authenticity while allowing for creative specials.
Ensure every pizza meets the highest standards for taste, texture, and presentation before it leaves the kitchen.
Maintain a clean and organised workstation in full compliance with HACCP and food safety standards.
Coordinate with kitchen and service staff to ensure timely preparation during high-volume periods.
