Job Description
Roles & Responsibilities
Perform daily physical, chemical, and microbiological analyses on raw materials, auxiliary materials, packaging, semi-finished, and final products to ensure compliance with food safety and quality standards (ISO 22000 / FSSC 22000 / HACCP).
- Conduct routine tests on raw meat (pH, protein, fat, moisture, nitrite, etc.) and final products (preservation tests, salinity, texture, color, TVN, FFA, etc.).
- Carry out periodic microbiological testing for water, ice, air, surfaces, and hands based on the sanitation and monitoring plan.
- Prepare culture media and operate laboratory equipment (incubator, autoclave, balance, pH meter, etc.).
- Record all test results in official paper and electronic logs, and maintain reference samples as per system requirements.
- Perform routine calibration and basic maintenance for laboratory instruments and monitor validity of chemicals and prepared solutions.
- Participate in the Environmental Monitoring Program and analyze trends.
- Support internal and external audits (WFP NFSA ISO FSSC).
- Report any non-conforming results immediately and recommend corrective actions.
- Assist the QA in preparing monthly reports and data analysis.
Desired Candidate Profile
Bachelor s degree in Science, Food Technology, Microbiology, or Chemistry.
- 1 4 years of experience in food industry laboratories, preferably meat processing or protein-based products.
- Strong knowledge of chemical and microbiological testing methods for food.
- Proficiency in operating essential laboratory equipment.
- Ability to read and apply relevant standards (CODEX ISO EOS FDA).
- Strong reporting skills and proficiency in MS Excel and Word.
- High accuracy, discipline, and ability to work within a team.
