Job Description
Roles & Responsibilities
Key Responsibilities
- Oversee the daily operations of the Turkish specialty restaurant, ensuring seamless service delivery aligned with Fairmont brand standards and luxury dining expectations.
- Ensure all aspects of restaurant readiness, including mise en place, cleanliness, ambiance, and table settings, reflect authenticity and excellence in Turkish dining culture.
- Conduct daily briefings and inspections to maintain consistency in food presentation, service rituals, hygiene, and safety standards.
- Monitor inventory levels, ordering processes, and cost controls, ensuring optimal stock management while minimizing waste.
- Ensure compliance with HACCP, local regulations, and company policies related to food safety and hygiene.
Guest Experience & Service Excellence:
- Curate an immersive and culturally authentic Turkish dining experience, incorporating storytelling, rituals, and personalized service.
- Engage with guests proactively, ensuring satisfaction, anticipating needs, and creating memorable dining moments.
- Handle guest feedback, complaints, and service recovery with professionalism, urgency, and a solution-oriented mindset.
- Collaborate with the culinary team to ensure menu knowledge is consistently delivered and that recommendations reflect authenticity and quality.
- Drive loyalty by building relationships with repeat guests and promoting signature experiences within the restaurant.
Team Leadership & Development:
- Lead, inspire, and develop a high-performing service team, fostering a culture of excellence, accountability, and collaboration.
- Conduct regular training sessions on Turkish cuisine knowledge, service standards, upselling techniques, and Fairmont service culture.
- Ensure team grooming, discipline, and professionalism align with luxury hospitality standards.
- Coach team members through continuous feedback, performance reviews, and development plans.
- Support talent development, succession planning, and internal mobility within the Food & Beverage division.
Financial Performance & Commercial Focus:
- Drive revenue growth through strategic upselling, promotions, and optimization of average check value.
- Monitor financial performance, including revenue, labor costs, and cost of sales, ensuring alignment with budget targets.
- Prepare forecasts, analyze trends, and implement action plans to improve profitability.
- Collaborate with marketing and events teams to promote the Turkish restaurant through campaigns, activations, and partnerships.
- Ensure accurate billing, cash handling, and compliance with financial procedures.
Brand, Culture & Pre-Opening Excellence:
- Ensure the restaurant concept reflects Fairmont brand positioning while honoring the authenticity of Turkish cuisine and hospitality traditions.
- Support pre-opening activities including recruitment, training, SOP development, and trial operations.
- Contribute to the creation and implementation of service standards, workflows, and operational manuals.
- Embed Fairmont culture and values within the team, promoting a sense of belonging and pride.
- Collaborate cross-functionally to ensure seamless guest journeys across all touchpoints.
Health, Safety & Compliance:
- Ensure adherence to all health, safety, and hygiene standards in line with local regulations and company policies.
- Conduct regular audits and ensure corrective actions are implemented promptly.
- Promote a safe working environment for colleagues and guests at all times.
Desired Candidate Profile
Qualifications & Experience:
- Bachelor s degree or diploma in Hospitality Management, Food & Beverage, or a related field.
- Minimum 3 5 years of experience in a luxury hotel or standalone specialty restaurant, with exposure to Turkish or Middle Eastern cuisine preferred.
- Strong operational knowledge of fine dining service standards and restaurant management systems.
- Pre-opening experience is an advantage.
