Job Description
Roles & Responsibilities
- Supply and management: Select carcasses from wholesalers or slaughterhouses, receive the goods, and manage stocks and the cold storage room.
- Processing and cutting: Mastering the techniques of deboning, trimming (removing fat/nerves), cutting, mincing, and tying roasts.
- Merchandising and sales: Prepare and organize the department (window display), label the products (price, traceability), advise and serve customers.
- Hygiene and safety: Strictly apply food hygiene standards (HACCP) and regularly clean equipment and premises
- Technique: Mastery of cutting tools (knives, saw, cleaver) and cutting techniques.
- Product knowledge: Anatomical expertise of animals (beef, calf, lamb, pig).
- Hygiene : Strict adherence to food safety standards (HACCP).
- Sales: Customer service skills, customer advice, product display in the shop window.
- Physical fitness: Good physical condition (carrying loads, standing for long periods, working in the cold).
