About Wynn Al Marjan Island:
On schedule to open in the United Arab Emirates in early 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.
About the Position:
Wynn Al Marjan Island is currently seeking a Director of Food and Beverage Fine Dining to join the resort s Food and Beverage Administration team.
The primary duties and responsibilities of this role are:

Define and execute the strategic vision for fine dining operations, ensuring alignment with Wynn Al Marjan Island s brand and business objectives.

Lead cross-functional collaboration with culinary, bar, marketing, and guest experience teams to deliver integrated and memorable dining experiences.

Ensure delivery of outstanding food and service to every guest across the portfolio

Lead, coach, and develop department heads and team members to build a performance-driven culture.

Lead and support restaurant managers and senior service staff.

Delegate tasks fairly and promote teamwork.

Stay informed about market trends and adjust menus, pricing, and staffing as needed.

Suggest new ideas to improve the restaurant s image and offerings.

Work professionally with other departments, managers, and contractors.

Attend meetings and share relevant updates.

Build strong relationships and encourage team spirit.

Champion innovation in service delivery, guest personalization, and operational efficiency.

Collaborate with culinary and bar leaders on menu development, promotions, and guest personalization.

Analyze guest feedback, operational KPIs, and financial metrics to identify opportunities and drive continuous improvement.
About You:
The ideal candidate for this position will have the following experience and qualifications:

Prior experience in fast-paced yet refined, high-end / luxury restaurant is required.

Experience in Michelin-Star, Gault-Millau and / or 50-Best Restaurant environments is preferred.

Deep understanding of Forbes 5-Star standards and luxury service delivery is required.

Demonstrated ability to lead teams in high-volume, high-expectation environments.

Excellent communication and interpersonal skills.

Strong organizational and time management skills.

Excellent written and verbal communication abilities.
