Job Description

Roles & Responsibilities

  • Orchestrate the development and execution of innovative, high-quality menus that meet stringent airline catering standards and passenger expectations.
  • Oversee all kitchen operations, ensuring adherence to strict food safety protocols, hygiene standards, and efficient production processes.
  • Manage and mentor a culinary team, fostering a culture of creativity, collaboration, and continuous improvement within the kitchen environment.
  • Control food costs and manage budgets effectively, focusing on minimizing waste and maximizing profitability while maintaining quality.
  • Collaborate with purchasing and supply chain teams to source high-quality ingredients that meet airline specifications and dietary requirements.
  • Conduct regular quality control checks and taste panels to ensure consistent food quality, presentation, and adherence to recipes.
  • Stay abreast of culinary trends, passenger preferences, and airline industry regulations to continuously enhance menu offerings.
  • Liaise with airline clients and stakeholders, providing menu presentations, responding to feedback, and building strong relationships.
  • Lead the development of special meal requests and dietary-specific menus to cater to diverse passenger needs and preferences.
  • Ensure the kitchen is equipped with the latest technology and equipment, and that the team is trained on their proper use and maintenance.

Desired Candidate Profile

  • Possesses a culinary degree or equivalent, demonstrating a strong foundation in culinary arts and kitchen management.
  • Holds a culinary certification (e.g., Certified Executive Chef) and/or food safety certifications, showcasing professional expertise.
  • Exhibits a minimum of 8-10 years of progressive experience in high-volume catering or airline catering environments.
  • Demonstrates experience in international cuisines and a deep understanding of diverse dietary requirements and preferences.
  • Has a proven track record of successfully managing and motivating culinary teams to achieve operational excellence.
  • Showcases strong leadership, communication, and interpersonal skills to effectively collaborate with various stakeholders.
  • Possesses exceptional organizational and time-management abilities to handle multiple projects and deadlines efficiently.
  • Demonstrates proficiency in menu planning, costing, and budgeting, with a focus on maximizing profitability.
  • Exhibits advanced knowledge of food safety regulations and hygiene standards, ensuring compliance and passenger safety.
  • Displays fluency in English; additional language proficiency is a plus, particularly in languages relevant to airline routes.
