Job Description
Roles & Responsibilities
Assist the Sushi Chef / Head Chef in daily sushi kitchen operations
Prepare sushi items including maki, nigiri, sashimi, rolls, and basic garnishes
Ensure high standards of food quality, taste, and presentation at all times
Follow recipes, portion control, and plating standards as per restaurant guidelines
Maintain strict hygiene, food safety, and sanitation standards (HACCP)
Handle and store raw fish and seafood safely and correctly
Support mise en place and timely preparation for service periods
Ensure proper stock rotation (FIFO) and minimize food wastage
Assist in receiving, checking, and storing kitchen supplies
Maintain cleanliness of workstations, tools, and equipment
Comply with health & safety regulations and company SOPs
Work closely with the kitchen team to ensure smooth service operations
Follow instructions from senior chefs and contribute to a positive team environment
Desired Candidate Profile
- Possesses a culinary degree or relevant certification, demonstrating a foundational understanding of culinary principles.
- Holds a minimum of 2 years of experience in a sushi kitchen, showcasing practical expertise and hands-on skills.
- Demonstrates proficiency in filleting fish, rolling sushi, and preparing sushi rice, highlighting technical abilities.
- Exhibits a strong understanding of Japanese culinary techniques and ingredients, reflecting cultural knowledge.
