Job Description

Roles & Responsibilities

As our Sous Chef, you will support the Head Chef in overseeing daily kitchen operations, ensuring smooth service execution across all meal periods.

You will play a key role in maintaining high culinary standards, supervising the brigade, and reinforcing consistency across preparation, cooking, and presentation.

Menu Execution & Quality Control

  • You ensure all dishes consistently meet brand standards in taste, presentation, and portioning.
  • You oversee food preparation and plating techniques with precision and attention to detail.
  • You monitor kitchen stations to maintain hygiene, orderliness, and compliance with all health and safety regulations.

Operational & Cost Management

  • You support inventory management, ordering processes, and supplier coordination to maintain ingredient quality and reduce waste.
  • You assist in controlling food and labour costs while maintaining production efficiency.
  • You ensure kitchen equipment is maintained and operational readiness is upheld at all times.

Desired Candidate Profile

Professional Culinary Experience

Minimum 5 7 years of kitchen experience, including at least 2 3 years as a Sous Chef or senior cook within a French or European fine dining or premium all-day dining environment.

Deep knowledge of classic and contemporary French cuisine techniques, sauces, and plating.

Proven experience working in fast-paced kitchens managing multiple meal services (breakfast, lunch, dinner).

Leadership & Team Management

You actively support the Head Chef in managing the kitchen brigade, training and supervising junior cooks and commis chefs.

You maintain team motivation, discipline, and efficiency during peak service periods.

You are confident stepping in to lead the kitchen in the Head Chef s absence, ensuring operational continuity.
